It all started when…

Laura met Kiki working at Jamie Oliver's Fifteen, way back in 2007, and built a friendship over a mutual love of food and wine.

Since then we’ve been on a mission to make wine accessible, believing that when it comes to wine, it should be a conversation that everyone can join in with.

After hosting pop ups under the A Grape Night In name between 2010-2014, Unwined was born in 2015 when we opened our first wine bar in Tooting, with our second site in Waterloo following shortly after in 2018. They’re a home away from home, a place where we open wines that we love and share with our community of wine lovers. 

So what’s our wine taste, and will you like it? When it comes to the wines we select and buy, we ask one question. Does it offer value? If the answer is yes, and it’s delicious and even better, sustainably made - then it makes the cut for Unwined.

Sous Chef – Wine Bar & Restaurant, Waterloo

We’re looking for a talented Sous Chef to join our brilliant team at Unwined in Waterloo - an independent wine bar and restaurant with a creative sharing plates menu designed to complement our eclectic wine list.

If you’re an enthusiastic, organised, and wine-loving chef who thrives in a close-knit kitchen and enjoys being part of a collaborative, forward-thinking team, I’d love to hear from you.

About the Role

As Sous Chef, you’ll play a key role in the day-to-day running of the kitchen - supporting the Head Chef in leading the team, maintaining high standards, and keeping service smooth and efficient. You’ll be confident running the pass in the Head Chef’s absence, and you’ll bring both creativity and precision to your cooking.

Your responsibilities will include:

  • Supporting menu development and dish testing

  • Leading busy services and ensuring consistency across the pass

  • Maintaining HACCP and food safety protocols

  • Assisting with stock control, ordering, and prep planning

  • Helping train and mentor junior chefs

  • Bringing new ideas and energy to the kitchen

About You

We’re looking for someone with solid experience in a professional kitchen and a genuine love of food and wine. You’ll have a calm, proactive approach and be motivated by teamwork, creativity, and growth.

Ideally you’ll have:

  • Experience as a Sous Chef or strong CDP ready to step up

  • A passion for seasonal, ingredient-led cooking

  • Confidence in leading service and managing prep efficiently

  • An interest in pairing food and wine

  • A positive attitude and strong organisational skills

What We Offer

  • Circa. £19.30 per hour (includes share of service charge/gratuities)

  • 35–45 hours per week, Tuesday to Saturday (every Sunday & Monday off)

  • 20 days paid annual leave + all bank holidays off

Assistant Manager – Wine Bar & Restaurant, Waterloo

We’re looking for an Assistant Manager to join our small, passionate team at our independent wine bar and restaurant in Waterloo.

If you’re excited by the world of wine, thrive in a hands-on hospitality role, and want to be part of a business where your ideas are valued - this could be the perfect next step for you.

About the Role

As Assistant Manager, you’ll play a key role in the day-to-day running of the bar and restaurant, supporting our Restaurant Manager and Head Chef to deliver great service, genuine hospitality, and an exceptional guest experience.

This is a floor-based role where you’ll lead by example, train and motivate the team, and take ownership across a range of responsibilities, including:

  • Running smooth, efficient services

  • Opening and closing shifts

  • Supporting with reservations and event coordination

  • Assisting with stock management, deliveries, wine list curation, and supplier relations

  • Contributing to our social media and marketing efforts

  • Hosting or supporting team wine trainings and guest tastings

About You

We’re looking for someone with genuine enthusiasm for wine and hospitality. You might already be an experienced Assistant Manager in a small restaurant, or a senior FOH team member ready to step up.

Ideally you’ll have:

  • WSET Level 2 or 3 (or working towards it)

  • Strong wine knowledge and curiosity to keep learning

  • Experience in table service and a people-first approach to hospitality

  • A calm, confident presence on the floor

  • A collaborative attitude and willingness to get stuck in

  • Experience with wine list curation, training notes, or tastings is a bonus - but we’ll support you to develop those skills if not.

What We Offer

  • 35-45 hours per week, across Mon-Sat rota (5 days on, 2 days off), Sundays off!

speculative applications for floor + BOH team.

We’re always looking for great floor staff to join the team at Waterloo. Ideally be able to work a min of 2 shifts and up to 4 shifts a week. Hospitality experience preferred but not essential, flexible rota but with evening and weekend shifts.

We pride ourselves on our service at Unwined. On top of your salary/pay rate, you’ll get a portion of service charge. There are no deductions for admin or card charges, 100% of all service charge and tips are shared by the team.
